Long celebrated and made famous as Brazilian Picanha steak, our 14 dry aged Black Angus produces a fabulous two and a half pound premium cut that shows you that wonderful marbling within, along with that signature one-sided tallow trim.  Also known as French coulotte steak, this has been a chef and steakhouse favorite in Europe.  Part of what makes Picanha steak feel special is the ability to share it so many ways - thinly-sliced on a reverse sear, or thick-cut cowboy style off the blade or spear.  No matter how you rub, spice, and cook it, this marbled goodness will not disappoint.  Because we hand cut and craft our portions with our local Ozark processor, we can save this special chef cut and share our small yields with a selected few who follow our legacy farm.

When our kids were little, we had the privilege of hiring several excellent professional nannies while our culinary travels were more intense.  Over time, one of those expert sitters, named Regina, became family to us, as our kids grew up.  Over the years, she comes back from Northern Brazil to share her stories, culture, cuisine, and experiences with us.  Learning about how Brazilians perfected their Picanha steak seasonings and complementary sauces always reminds us that indeed, it does take a village to raise a decent human.  This Picanha steak is a perfect way to share family table at the dinner table, precisely the way our own Regina has made our lives rich.
